1 kg minced beef

400 gr. Cheddar

1 grated chopped onion

1 tablespoon cumin

1 tablespoon dried coriander

½ tablespoon oregano

¼ tablespoon salt

2 tbsp. tomato paste

2 tbsp. olive oil

5 chopped tomatoes

1 can of black beans

8 tortillas

200 gr. strained yoghurt

Fresh coriander

Put the oil in a saucepan and sauté the minced meat very well for about 15 minutes. Add the chopped onion, spices, tomato and paste. Add a little water and simmer until the minced meat is cooked. At the end, add the beans and the cheese, and let it melt, turning off the stove.
Fill the tortillas with the mixture, adding the yogurt.
Wrap tightly, pour the cheese on top and place the tortillas in a small pan. Place the pan in a preheated oven (at 200) until the cheese is melted.

Serve with rice and corn.
